Any post whose video has a soundtrack. That covers ordinary uploads, longer Premium videos, and clips people record from broadcasts or streams and post as video.
What does not have audio: photo posts, text posts, polls, link previews, and GIF posts — the last of those are stored as silent looping video, so there is genuinely nothing to extract.

The AAC stream copied straight out of the video. Best quality, and accepted by every modern phone, computer and browser.
Re-encoded once for the widest possible hardware support. Choose it when a specific old device insists on MP3.
Extracting audio does not change who owns it. Music, a broadcast segment and a recorded talk all remain someone's work, and keeping a copy for yourself is a different thing from republishing it or putting it in something you distribute.
